Chilli Bruscetta


Serves - 4 as a starter or snack

Cooking time - 15 mins


  • 3 good quality tomatoes
  • 1x tablespoon of Baj's Blazin' Original Hot Sauce
  • 1x red onion
  • 2 tablespoons of extra virgin olive oil
  • fresh basil
  • a pinch of dried oregano
  • a handful of black or green olives
  • salt and pepper
  • a large Sourdough or buscetta loaf


  1. Chop the tomatoes, red onion and olives finely and place in a bowl
  2. Add the olive oil, oregano and Baj's Blazin' Original Hot Sauce  and stir in with the tomatoes, olives and onion

  3. Add some pepper and if needed very little salt (the olives will provide the salt naturally, especially if you make this up in advance)
  4. Hand break some fresh basil and add to the tomato topping
  5. Set the topping aside for 5 mins to allow all of the ingredients to incorporate
  6. Slice the bread in 1cm slices and toast or griddle on either side
  7. Spoon on the tomato topping and serve
